Chai Spiced Blondies

Yields: Fills a 10 inch square tin, roughly 12 slices.
Ingredients:
170g Butter
400g Brown Sugar
2 Large Eggs
240g Flour
1tsp Vanilla Extract
4tbsp Vegetable Oil
1 Tea Bag of 6 Spice Masala Chai
1tsp Baking Powder
1tsp salt
150g White Chocolate
100g Ginger Nut Biscuits (optional)
Toppings:
4tbsp Granulated Sugar
2 heaped teaspoons of Cinnamon
Method:
Preheat oven to 180 degrees and line bottom of tin with parchment and set aside.
Take a pan, on high heat, and melt all the butter until it starts bubbling.
Turn the heat down and boil until a foam appears. Then, turn the heat off and let the bubbles disappear (there should be burnt bits at the bottom!). Set aside to cool.
Sieve together the Tea Bag, flour, baking powder and salt.
Mix oil, butter and the brown sugar together until thoroughly combined.
Add the eggs and whisk together until slightly pale in colour.
Fold in dry ingredients and the optional chocolate and Ginger Nuts Biscuits and add into a lined tin (note, it will seem like a cookie dough, if you want a looser texture add a touch more oil).
Mix together granulated sugar and cinnamon for the topping and sprinkle on top.
Bake for 23-25 mins.
Be sure to let it cool once baked and viola!
