Ingredients
For the crumble
300g plain flour, sieved
pinch of salt
175g brown sugar
200g unsalted butter at room temperature, plus a little for greasing the tray
4 plain Digestives biscuits
A pinch of ground cinnamon
For the filling
450g apples, peeled, cored and cut into 1cm pieces
50ml of apple juice
10ml of water
One emptied tea bag of the 3 Spice Cinnamon Chai
Method
Preheat the oven to 180C/350F/Gas 4.
Place the flour, salt and sugar in a large bowl and mix well. Taking a few cubes of butter at a time rub and crumble into the flour mixture. Crush up the digestives and add this in too. Keep crumbling until the mixture resembles breadcrumbs.
Place the fruit in a large bowl and pour over the apple juice. Then, sprinkle over the sugar, flour and 3 Spice Cinnamon Chai Tea bag. Stir well being careful not to break up the fruit.
Butter an ovenproof dish. Spoon the fruit mixture into the bottom. Layer the crumble mixture on top and sprinkle over the ground cinnamon.
Bake in the oven for 40-45 minutes until the crumble is browned and the fruit mixture bubbling.
Serve with thick cream or custard.
